  • filling but healthy and low cal

Is there such thing as a recipe that is filling, healthy, and low in calories all at the same time? If so, what is this miraculous meal?

There are lots of recipes that are good for you, filling, and are low in calories. One of my favorites is whole wheat pasta with vegetables and ricotta cheese. Here’s what you need:

1 cup of whole wheat pasta (your choice, I like farfalle – “bowtie” pasta)
3 tablespoons of extra-virgin olive oil
½ cup of fresh or frozen peas
    1 pint of cherry tomatoes
    1 onion
    1 bunch of asparagus
    3 garlic cloves
½ cup of partly skimmed ricotta cheese
    Salt and pepper to taste

Cook the pasta as directed, drain, and put in a large bowl. Defrost the peas (if frozen). Cut tomatoes in half, chop the onion, slice the garlic, and cut the asparagus into one inch pieces.

Heat the oil in a large frying pan on medium heat and brown the garlic (should take about 3 – 4 minutes). Add the rest of the vegetables. Cook (stirring frequently) for 5 minutes and then turn up the heat to medium-high and cook for another 4.

Add the veggie mixture to the pasta and mix well. Divide the pasta among 4 bowls (this recipe makes 4 servings). Add a spoon of ricotta cheese and drizzle a bit of olive oil on top. Voila!

This meal is 320 calories, 12 grams of protein, 9 grams of fiber and 14 grams of fat. It’s also very good

A great deal of recipes are filling, healthy and low in calories. Mostly it's just a matter or controlling portion sizes and making sure that vegetables make up the largest food portion on your plate.
