I'm looking for a good all-vegetable meal that's not salad. Does anyone have any suggestions?

I would say that instead of a salad you should go for a stir fry. But there are lots of other types of vegetarian dish that aren’t that either. I like to just go through my fridge, chop up all the veggies I think will go together, then throw in some black beans. It can include things like bell peppers, snap peas or snow peas, zucchini, grape tomatoes, kale and pretty much anything else you like, with black beans and even some toasted sesame seeds. Several of those veggies will break down enough to actually create a kind of sauce for everything so you don’t need to add something high in sugar or sodium. Toss in some black pepper and a light sprinkling of turmeric to really shake things up.

I would also recommend that you try eggplant Parmesan. Just got light on the cheese. It's important that you include some type of fat with your all-vegetable meals so that you can better absorb the nutrients of the vegetables you're eating. Ratatouille is another good one

If you like chili, make that but without meat. Instead, make it with several kinds of beans, such as red kidney beans, black beans and navy beans. They will add the "weight" and consistency you're used to in chili but have a great flavor too. It fills you up and gives you protein but doesn't give you all the added stuff that comes with ground beef like the risk of hormones and antibiotic use in the cows. It's also way better for the environment so if you're looking to reduce your impact, way to go with cutting back on meat.
