One of my Thanksgiving guests this year is on a plant-based diet. I realized that not a single one of the things i serve is vegan friendly. My mashed potatoes have butter, parmesan cheese, milk and sour cream. My bean casserole has milk and cream of mushroom soup. I can set aside some plain mashed potatoes with just salt and pepper, but what else can I serve? I want her to feel welcome and enjoy the meal, but I don't know what I'm dong! Recipes please!

Anything that has cheese on it, just use a vegan cheese instead. There are a lot of good options out there. Plant based cheese alternatives have come a long way in even the last five years let alone ten. It's getting good. Just check out what you want it to do. Do you want it to melt like cheddar or mozarella? Do you want it to act like parm? Instead of butter, just use margarine based on olive oil.
