  • Cooking carrots

    I have a lot of carrots and I want to go through them all, but beyond eating them raw and boiling them I don't quite know how else to cook with them. Anyone have any good carrot recipes?

    Try oven roasting them with garlic and onions in a bit of olive oil. They taste great.

      When you want to give yourself a treat, why not use your carrots to make yourself some carrot cake or carrot muffins!

        Just put a touch of olive oil in a pan and cut baby carrots in half, lengthwise and just drop them in. You will be stunned at how awesome they taste when they've softened and browned a little bit. They come out sweet and very flavorful.

          Shred them and toss them into a stir fry somewhat near the end (they'll cook fast once they're tiny). Very good addition and lots of nutrients.

            To add to Drew's comment, I also shred carrots and add them to coucous, lentils and as a garnish to lots of dishes. There really are many ways that you can add carrots to your dishes.
