  • why isn't grocery store sauerkraut a good fermented food?

I've been looking to add fermented foods to my diet. Why is it that everybody says grocery store sauerkraut in a jar doesn't count?

The stuff in the grocery store that is in the refrigerated section is often fine. It's the shelf stable stuff. It's been boiled so long to give it a long shelf life that it cooks out the beneficial bacteria, not just the unwanted kind.

I have been eating so much sauerkraut from the grocery store, thinking I have been doing something good for myself over the years. I'm really frustrated that it's not what I thought it was. Are there really no probiotic benefits there, or is it just that there's less?
