  • know the difference between water loss and fat loss

There is a big difference. If it goes away or comes back really fast - within a couple or three days - it's usually water, not fat going up or down. That's why fad diets are lies and why super rapid unexplained gain is usually nothing to worry about. Just hydrate

It's really hard to tell when it's happening, but it's easy to know in retrospect. hindsight is 20/20 right?

How DO you know when it's happening? If I weigh myself today, try to stick to my diet and exercise, and weigh myself tomorrow and there's a change, how would I know if I've lost fat or water?

Fluctuations that go up or down fast are almost always water. You really don't lose a pound or two of fat in a day. That's water loss.
